PHYSICAL AND CHEMICAL METHODS OF EVALUATION FOODS

Measurement of Volume of a Baked Product by Rapeseed Displacement to Top

There are instruments specifically for this purpose and there are modifications of the method below. This is the simplest (and crudest) method:

1.Obtain a containers. g. a can or a box -that is somewhat larger than the sample.

2.Set it into a larger container (for catching stray seeds).

3.Fill the smaller container with rapeseed by pouring the seed from a large measuring cup through a funnel at as constant a rate as possible. Overfill slightly and scrape excess seed into the larger pan with the edge of a spatula blade held vertically. ring attached to ringstand

4.Transfer the seed (without spilling!) with the aid of a funnel, into a large (1000-ml) graduated cylinder. Measure and record the volume of the seed. Return the seed to the measuring cup.

5.Put the sample into the can (If it has an irregular bottom, add some seed to the can first and push the sample gently into the seed). Fill and level as in 3.

6.Again transfer seed to the cylinder and read its volume.

7.Obtain product volume by difference.
