Press Fluid Yields for Meat to Top

1.Weigh 25 g. of finely ground meat.

2.Pack cylinder as follows: Place shallow plunger in bottom of empty cylinder (end with large openings) and locate in center of 5-inch shallow pan. Insert a 6-inch round of 4-ply cheese cloth into the cylinder and follow with a 5. 5 cm. round of filter paper. Let cheese cloth extend up the sides of the cylinder. Add 1/3 ground meat, filter paper, 1/3 ground meat, filter paper, and last 1/3 meat, filter paper and fold cheese cloth over the top. Insert long plunger into the cylinder.

3.Place filled cylinder on platform of press. Begin operation 3 above.

4.Increase pressure according to the following schedules. Increase gradually so that indicated guage reading will not be exceeded at indicated time.
