Jelmeter Test for Determination of Amount of Sugar per Cup of Juice for a Pectin Gel to Top

1.With a spoon or a small beaker pour juice into the Jelmeter from the top. Allow it to run into the capillary and begin to drip. Then close the capillary tube by holding the tip of the little finger at the bottom.

2.Holding the Jelmeter in a vertical position, continue filling it (slowly to prevent air block) until it is filled (actually humped).

3.Note the time and simultaneously remove the finger from the bottom.

4.Allow juice to drip for exactly 60 seconds.

5.Stop flow by clamping forefinger over top opening. Take reading to nearest 1/4 cup sugar.

6.Empty Jelmeter by inverting. Immediately run warm water through it or the capillary tube may become clogged.
