INK PRINT to Top

A modification and expansion of the ink print test may be used to permit comparison of a number of baked products. This comparison may be made permanent by use of pencil, stamp pad and paper.

Procedure is as follows:

1. Trace the outer perimeter of the baked product to be tested. Generally, this tracing is over and around a representative center slice.
2. Apply memeograph ink, tempera paint or "stamp ink" to a commercial stamp pad or celluose or plastic sponge.
3. Place the traced slice on the ink stamp pad.
4. Place the inked slice on the traced area. Remove.
5. Dry and determine area or volume.
