Pen and Chart Paper Preparation
1. Install pen with long portion of slot toward left. Secure with pen screw. Add ink to the reservior in the pen (press rubber bulb at bottom end of ink cylinder). Apply gentle pressure to pen shaft to raise capillary rod, allowing ink to flow.
2. Using knob to the left of the chart, roll chart so that pen is on 0-time.
Practice Assembly and Disassembly
1. Lower the white-handled lever while supporting head of instrument with other hand. Note-the stirrer comes up along with head. The sitrrer is in locked position. To release stirrer, bring the 2 levrs on right in the knurled rings toward each other when the head is only slightly raised. Push down gently on stirrer if necessary to release it. With stirrer unlocked, swing the head all the way up and ten to the right (holding white-handled lever down as a precaution against its slipping and permitting the head to drop). Before removing the bowl observe the distance it extends above heater (approximately 1/2 inch). Lift bowl out and observe notch in bottom of bowl corresponding to pin on shaft in base of heater.
2. In putting the bowl back, line up the notch with the pin in the instrument. Rotate slightly if necessary in order to seat bowl. Check alignment of pins in bowl and stirrer (not necessary with every use but should be done frequently).
3. Put stirrer in bowl with pin to the right. Swing head around to the front as far as it will go, again with left hand on white handle. Gradually raise handle, while supporting the head so as to lower thermoregulator gently into bowl. Aid the right side and guide pin into slot if necessary. Lock stirrer levels.

Preparation for Test
1. Turn on the main power switch and the light switch. With the transport level on the left side of the head in the middle (0) position, turn the center knurled rod above the front nameplate counter-clockwise to position the thermoregulator indicator at 25C. Turn power switch off. Turn the transport level to the UP position by pulling spring knob out and positioning correctly.
Testing
1. Raise head slightly by depressing white-handled lever, again supporting head with other hand. Unlock stirrer, raise head completely and swing to right. Remove stirrer from the bowl. Add suspension quantitatively and quickly to bowl. Replace stirrer, pin to the right. Swing head to the front again with left hand on knob and right hand supporting head while lowering the thermoregulator gently into the bowl. Guide pin into slot. Lock sitrrer with leverls.
2. Turn on main power switch, push red button in center of timer to start heating cycle and start an external timer simulatenously. (Amylograph timer is inoperative.) Set another timer for a little less than 45 minutes. Watch the chart and when the pen is exactly on the 45 minute line (labled 5, because the chart is marked off in 20 minute blocks), change the transport lever to the middle position to maintain temperature. At the end of 1 hour turn off the main power switch.
3. Raise head, release stirrer. [see step 1]. Swing head to right and remove bowl. Fill 3 small custard cups to middle line with paste.
4. Clean bowl, stirrer. Clean thermoregulator and metal cooling coil beside it with a damp paper towel. Do not apply pressure to the thermoregulator. Reassemble instrument. Leave the pen in ethyl alcohol or covered when not in use.
