"Cassava (Manihot esulenta Crantz) is a perennial vegetatively propagated shrub grown throughout the lowland tropics for its starchy, thickened roots.

Cassava has long been a basic staple. There is direct evidence of its cultivation 2500 years ago and circumstantial evidence that the crop may have been cultivated for 4000 years in the Americas. It has been suggested that many areas now under tropical rainforest were once cultivated with cassava and corn in shifting culture. On the arrival of the conquistadores from the Old World, cassava was found throughout the lowland tropics of the Americas and the Caribbean. The cassava was either eaten after boiling or rasped, after which the toxic juices were eliminated by squeezing the mash in basket-weave tubes (known as a tipiti in Brazil) and the remaining mash was roasted to a meal. Cassava production appears to have decreased after the arrival of the conquistadores, when the population of lowland areas was decimated by introduced diseases. (article has further information)

Farinograph curve gives a fair indication of the inherent strength of a flour. Indices such as "dough development time," "stability,""mixing tolerance index" and "degree of softening" may be calculated from the finished curve. Mixograph recording dough mixer is widely used in North America for determining rheological properties of flour-water doughs.

Chopin Alveograph curve is a complex plot of pressure vs. time during the blowing of a buble of dough. Maximum height and length of curve are used as measures of the resistance of the dough to deformation and of the extensibility of the dough.

Abstract A new versatile viscometer for measuring the properties of starch slurries during cooking is described and emonstrated. The effects of sample size, rotational speed, shearing gap size, and starch concentration on the characteristics of the viscosity, time, and temperature relationships were examined to establish optimum test conditions. The instrument records precise viscosity curves and indicates the slurry temperature in the region where it is undergoing shear.

Increasing concentrations of ions flowing through the xylem of plants produce rapid, substantial, and reversible decreases in hydraulic resistance. Changes in hydraulic resistance in response to solution ion concentration, pH, and nonpolar solvents are consistent with this process being mediated by hydrogels. The effect is localized to intervessel bordered pits, suggesting that microchannels in the pit membranes are altered by the swelling and deswelling of pectins which are known hydrogels. The existence of an ion-mediated response breaks the long-held paradigm of the xylem as a system of inert pipes and suggests a mechanism by which plants may raegulate their internal flow regime.
