Zucchini-Beef Casserole
10 oz. box frozen zucchini
1 tablespoon water
1/2 pound ground beef
No. 303 can tomatoes, drained
Garlic and salt to taste
1 tablespoon cornstarch
small amount of juice from tomatoes
1 cup grated cheddar cheese
Cook zucchini in the 1 tablespoon water until separated. Drain. Brown beef. Add salt, garlic and onion flakes. Combine cornstarch with drained tomato juice. Add tomatoes to beef. Add cornstarch mixture. Cook until bubbly. layer beef and zucchini in casserole. Top with cheese. Bake in 350F oven 30 minutes or until bubbly. Serves 4.
