Rice Zucchini Casserole

1.5 cups cooked rice
1.5 cup sharp grated cheddar cheese
3-4 small zucchini squash
1 can mushroom soup
1 onion

Saute onion and squash in butter over low heat about 5 minutes. Mix with vegetables. Put layer of rice and vegetables in bottom of casserole. Mix cheese with soup and pour over rice. Put grated cheese over the top if desired. Baked at 350F for 20 to 25 minutes or longer.
