What are the health trends? Following are thoses that are the health market segments:
This trend will impact food-product development. Data reported by Rice and Eddy (1999) indicates that 2/3 of Americans use vitamins and other dietary aids for health reasons. They also indicate that organic food sales continue to grow. Sales of foods labeled "natural" or "organic" reached almost $15 billion in 1998. Rice and Eddy sees 46 percent of U.S. consumers either "strongly" or "generally" interested in buying organic products. In the MarketPlace, Food Engineering (Anonymous, 1994) indicated in 1994 that Healthy Food Sales would reach $45 billion by 1997. They published the following table.
Healthy prepared foods include low-fat, low-cholesterol, high-fiber,sodium-reduced and vitamin-and mineral-enriched foods.
