What are the optimum storage conditions for cherries?
The preferred temperature for storing cherries is 31 to 32F at relative humidity of 85 to 90%. Cherries of all varieties are poor keepers. The approximate limit for successful commercial cold storage of fresh sweet cherries at shipping point is probably about 10 days or two weeks. They can be held at destination only a few days. Lug cherries for shipment to eastern markets usually are shipped in refrigerated express cars.
Sour cherries are generally unsuitable for storage, except for a few days at 32F to extend the processing period. The freezing point of sweet cherries is 24.5F, sour cherries 28F.
