has a very important role to play in dietetics; a role almost as vital as that of menu planning and food preparation. It is the background for the meal. The chief function of background is to establish the proper mood or atmosphere in which the meal will be eaten. If the mood or atmosphere is harmonious, it will never be noticed in itself, but the actual meal will be ehhanced a thousand fold. If the mood is not proper, again it will not be self-evident, but there will be a distinct air of wrongness about the dinner.
