RAIL
Ward, Artemas. 1923. The Encyclopedia of Food. New York, Number Fifty, Union Square.
is a group designation for a large family of birds distributed over many countriles and ranging in size from the small Sora to the big Clapper-rail. The sora- also called "Carolina rail" is the best known in the markets. Plucked and ready for market, the birds average in weight from 2.5 to 3 pounds a dozen-this average being, however, dependent on a normal season.
