PAKCHOI

Ward, Artemas. 1923. The Encyclopedia of Food. New York, Number Fifty, Union Square.
(Brassica chinensis) is a Chinese "cabbage" grown in some American gardens. The average plant consists of a few lossely erect, tender, broad leaves with thick white stems. It sometimes develops edible tuberous roots. Tuberous-rooted pakchoi (B. napiformis), a closely related species, is cultivated especially for its roots, which resemble white, spindle-shaped turnips in both appearance and flavor.
