PACKET CHEESE
Simon, Andre L. 1952. A Concise Encyclopaedia of Gastronomy. Harcourt, Brace and Company, New York.
Packet Cheese is the trade name given to cheese which has been carefully treated by secret processes so as to arrest its development at the most favourable m oment and thus prevent any further ripening. After it has been 'processed', the cheese is enclosed in airtight containers, usually wrapped in tin-foil, and is safe from the risks of deterioration. The 'processing' methods have now been so perfected that the standard brands of 'Packet Cheese' have secured a very large measure of public support.
