FAIRY RING MUSHROOM (Marasmius oreades)

is a small, cap-shaped mushroom, white to pale yellow-brown, on a slender stem. The cap is broad, smooth, and moist; the flesh is thick and creamy pink to tan; the gills are broad and creamy white, the stem is long. Common in grassy areas where it often forms neat circles, it may be gathered June to September throughout most of the United States. It is quite a popular vegetable; with a delicious taste and fragrance. Fairy ring caps have a very choice flavor and dry well for preservation as distinctive food additives. Enjoy careful harvesting when this delectable species is found, and with proper irrigation the same area will produce mushrooms all summer.
