What is the difference between light and dark brown sugar? to Top

Basically, it is a difference in the time that the syrups/sugar are removed during the purification process. The dark brown contains more organic acids and minerals, the light less. Of course, this is the more modern method of making brown sugar. It is just part of the continum of preparing white granulated sugar.

The choice depends on the recipe you are using and personal preference. Dark brown sugar has a stronger molasses flavor. Choose lighter types for baking, butterscotch and glazing ham. Use richer-flavored dark brown sugar for gingerbread, baked beans, plum pudding and other full-flavored foods.
