What can I do about white sugar that has hardened? to Top

Granulated sugar hardens and develops lumps when it is exposed to moisture and then allowed to dry out. To render the sugar useable, break the lumps into smaller pieces with a rolling pin or similar utensil. Whirl the sugar in a blender or food processor until the lumps break apart and the sugar is measurable.

This webber sometimes will add a small piece of apple to the sugar or even microwave it just a tad to soften it enough to weigh. Yes, I like to use a weight with the sugar [200 grams=1 cup].
