In some locales, manufacturers add dextrose, a sweetener derived from corn, to granulated cane or beet sugar to form a white granulated blend that may be less expensive than traditional sugar. Dextrose is about 70% as sweet as sugar and is more hygroscopic (water attracting). Because of these characteristics, blended sugars do not usually perform exactly like sucrose in certain recipes.
