Can modified starches be directly substituted for cornstarch? to Top

No, it depends on the type of modification. Modification of cornstarch may vary all the way from increasing viscosity to decreasing viscosity. The same can be said for the affect upon gel strength. Of course, modification could also be done so there is little if any type of change in affect.
