What is the aim of table service?

The aim of any table service must be:
- To place food in perfect condition before those seated at the table.
- To remove soiled dishes and silver from one course and prepare the table for the next course.
- To perform such service with no disturbance or annoyance to those at the table.
- To reduce the service to essential motions.
- To have the rules for this table service so comprehensible and unvarying that a waitress is never in doubt as to the correct services.
