Can you summarize natural plant pigments? to Top

It is difficult to summarize in detail the natural plant pigments as research is constantly updating and identifying new pigments. Following is a general overall table that illustrates some of the complexity.

SUMMARY OF CHARACTERISTICS OF NATURAL PIGMENTS

Pigment Groups Number of
Compounds
Color Solubility Stability
Anthocyanins 120 orange, red, blue water soluble pH sensitive, heat labile
Betalains 70 yellow, red water soluble heat sensitive
Carotenoids 300 colorless, yellow, red lipid soluble heat stable
Chlorophylls 25 green, brown lipid and water soluble heat sensitive
Flavonoids 600 colorless, yellow water soluble fairly heat stable
Leucoanthocyanins 20 colorless water soluble heat stable
Quinones 200 yellow to black water soluble heat stable
Tannins 20 colorless, yellow, brown water soluble heat stable
Xanthones 20 yellow water soluble heat stable
