Can you summarize natural plant pigments?
| to Top |
It is difficult to summarize in detail the natural plant pigments as research is constantly updating and identifying new pigments. Following is a general overall table that illustrates some of the complexity.
SUMMARY OF CHARACTERISTICS OF NATURAL PIGMENTS
| Pigment Groups | Number of Compounds | Color | Solubility | Stability |
| Anthocyanins | 120 | orange, red, blue | water soluble | pH sensitive, heat labile |
| Betalains | 70 | yellow, red | water soluble | heat sensitive |
| Carotenoids | 300 | colorless, yellow, red | lipid soluble | heat stable |
| Chlorophylls | 25 | green, brown | lipid and water soluble | heat sensitive |
| Flavonoids | 600 | colorless, yellow | water soluble | fairly heat stable |
| Leucoanthocyanins | 20 | colorless | water soluble | heat stable |
| Quinones | 200 | yellow to black | water soluble | heat stable |
| Tannins | 20 | colorless, yellow, brown | water soluble | heat stable |
| Xanthones | 20 | yellow | water soluble | heat stable |
