Are nitrates and nitrities a problem in the diet? to Top

These compounds may form nitrosamines in the meat or after ingestion. Nitrosamines have been linked to human cancers. Nitrates occur naturally in root vegetables and there is no evidence that consumption of root vegetables is linked to higher cancer rates; however, some theorize that eating large amounts of cured meats, in addition to the nitrates already in the diet, incrases the risk of cancer. Nitrosamine formation in the body is decreased by vitamin C present in the stomach at the same time. Perhaps a large glass of orange juice should be the beverage with a corned beef sandwich. Nitrite can be omitted from household recipes for products that will always be stored forzen or refrigerated; however, the color and flavor will be altered.
