What is fat crystallization?
| to Top |
Crystallization of fat is realignment of the triglycerides (similar molecules). Remember, this means three fatty acids of varying lengths and configurations sticking out from the backbone glycerol. The easier they fit together and align the lower the melting point (more likely a solid).
