The history of this phrase gives us a glimpse into the many challenges bakers faced through the centuries. The expression dates back to Old English law. Under the law, bakers were severely penalized if the baked loaves of bread they sold were underweight. The bread was sold by the dozen and by weight to comply with the laws. To avoid the punative action taken agains offenders, bakers added another loaf to the dozen. Thus, a dozen plus one became known as a "baker's dozen."
