Sea Urchin Embryology has tutorial and lab manual. It describes how to stimulate the discharge of sperm and egg with injections of KCl, and how to house and feed the animals. A variety of projects are included.

Sea Urchin is sometimes called oursin and is the popular name for the marine animals of the Echinus species. It is covered with spines and several species of edible. The best are the Green sea-urchin and the Black sea urchin. The latter is called by various names in regions as Sea hedgehog, Sea Egg and so forth. It is found at low tide on rocks.

Sea urchin is chiefly eaten, lightly boiled, exactly like an egg. It is often cooked in salted boiling water, drained and open by cutting with scissors on the concave side where the sea-urchin's mouth at. It is drained and one throws out the excremental part, then dip sippets (morsels orb) into the shell.

It is said the sea urchin has great restorative powers. Its taste, when cooked is somewhat like crayfish.

This webber was tangentially involved with developing the sea urchin program in Oregon. In this program the thrust was to determine the feasibility of using the gonads or roe (reproductive part of the sea urchin) for the sushi market. although we did some product development with recipes, economically, it worked best to eat it fresh.

COOKING HINTS

"Usually the roe or eggs are eaten raw by those who relish this delicacy by spreading on thick bread or crackers. These are easily separated from the other intestinal organs by washing carefully. The brighter the orange color, the better the flavor. To the authors the taste resembles that of an under-ripe peach or a papaya. A little lemon or lime enhances the flavor. From Australia comes the report that live urchins are thrown into an open fire until the spines burn. They are removed, cracked open and eaten while steamy. Pacific northwest Indians ate sea urchins for food and for medicinal purposes."

"Always be certain to wear leather gloves when handling urchins. To prepare for eating raw or for cooking, free the tangerine-like sections from the gut. Cook as for Poached Eggs. The flavor is much like that of brains. if eaten raw with a spoon, both roe and milt - the creatures are bisexual - are highly prized. in Japan the flesh is served as a fermented paste. In Latin America it frequently find its way into an omelet."
